Does anyone make a switch with optional hub configuration. It would seem easy to do, just forget which ports are where. Ideally, I'd like to get a managed giga switch with a button that makes it act like a hub for when I need to do wireshark troubleshooting.

I don't think you could ever make a gig switch run as a hub. There is no such thing as half duplex on gig so it would always assume there can be no collisions which is not true on a hub.
If you are going to get a managed switch almost all have a mirror port option.
