Multi Monitor Setup Help

So I wanna setup a 3 monitor setup.
I just want to know if I'm able to play a game on one screen and use the other 2 for something else. The reason I'm asking is because on multi monitor setups I have seen the game is running on all monitors.

It is quite common and very easy to game on one monitor and use the others for web browsing,work, and to keep track of your system temps. Most games allow you to run windowed full screen which means that you can do things like alt+tab while still having your game running and in the foreground, but being able to use your mouse on the other screens. You can also do something like setting the screen to windowed mode which means as soon as it detects that you are on the edge of that box it gives you back your regular mouse pointer to do other things on your computer.
