Fresh install, setting up storage partition

So I recently bought an SSD and a large HDD, when I installed windows, I installed it on the SDD.

Now with a fresh install, everything is currently on my SDD, so my questions are as follows.

1. How do I safely move everything except windows, antivirus, and a few core programs off the SSD and onto HDD.

2. Is there a way to lock the SSD so only the programs already on it can write to it, or setup the HDD as the default for extra files?

If I can't pick and choose which programs remain on SSD, I'm okay leaving them all on it. I'd just like having lots of elbow room for storage in the future.

Can I just select everything except program folder and windows and just cut > Paste onto the HDD or would that mess up directories?

Moving 'applications' to the HDD - just reinstall them on that drive.
