Right, so I was wondering whether or not it would harm anything to have two separate connectors plugged into the PSU and the GPU... It needs 14 pins so I'm just asking for advice before I go ahead on a whim...

Here's an image of what it looks like... On this PSU each connector cable can be plugged in individually & I'm no expert at this, as this is my first build.

Thanks!

No problem. Both the psu and gpu are designed for just that purpose. Depending on the card, some gpu's require a single 6pin; some need 2x pin; and some need one x6 and one x8. The cords from the psu should be 6 plus 2 (6pin plus a "dangling" 2pin) which allow you to use either 6 or 8 pins as needed.
