i7 4820k or i7 4930k?

I don't really mind since they both use the LGA2011 chipset, which I need as I'll be using 2x Overclocked GTX 780 Ti
in SLI, running games like Battlefield 4, Metro Last Light, Crysis 3, etc at 4K resolution with maximum graphical settings turned on, and 4x MSAA while still getting 30+ fps.
I won't be doing heavy. CAD or 3D rendering, so should I take the i7 4820k of i7 4930k?
I'll watercool the CPU and overclock it to about 4.9GHz.
Is that complete overkill?
Btw I don't really care about 60fps, as 30fps seems more than playable to me, while not as smooth as 60fps, but I'll be using a 60Hz Dell UP3214Q UltraSharp 4K monitor.
