[1x8gb] ram or [2x4gb]ram which is better and does it make a difference?

Makes a big difference, 2x4GB every time. Reasoning is that it runs in dual channel, both working together.

Yep, 2x in dual channel can provide up to about a 10-15% performance increase over single channel mode....in single channel the DRAM operates as what it is, a 64bit device, in dual the MC (memory controller) looks at it as a 128bit device
