Performace difference between Asus Poseidon vs Asus 780 OC

Hi I am thinking upgrading my 679 MSI PE to either two Asus 780 Poseidon or Asus 780 OC version.

Question:
What is the difference between the two cards other than the cooling unit one being water and air cooled vs air cooled only?
Does the Poseidon use different components if so which ones?
If I add water cooling on the 780 OC version would the performance be similar to Poseidon? if so why not? Thanks.

Poseidon would be ideal with a water cooled setup, I see the Poseidon is @ $600 (I think ASUS wanted to charge more but then 780ti came out while they were developing it or it was too late for them to stop production). I ended up getting a PNY 780TI OC (and then OC'd it even more) for $660 which isn't that much more and I don't have to worry about water cooling. Keep in mind I had a 780 OC for about two weeks (still air cooled but also OC'd) and the TI is a lot faster still.
