Will the gpu performance differ on a b75m and a z77m

It should support that graphics card as long as it has a PCIe 2.0 or higher , which i believe it should.
z77 is for overclockable processors and b75 is not for overclockers.
No , the performance shouldnt differ as long as you dont have a lower end i3 or something , i hope you have an i5 of the 3rd gen , a decent quad core.

Take an i5 Quad Core doesnt matter if its locked or unlocked , its pretty good still for gaming !

Hi,

as long as you have a full PCIe x 16 slot then the gpu wont be held back.

The higher end platforms are intended for people who want to overclock the cpu, or run dual graphics cards). That motherboard looks find to run the GTX 750ti.

Yes it would be.
Dont worry , for gaming all you need is a better gfx card.
