what ram will make gaming/overall operation, faster and smoother?

Ok, so on my last deployment I saved up all my pennies to buy a monster gaming computer (as best I could considering I don't know much about computers except what I see online and advice from friends). When I bought the system I saw that it could be upgraded to 24gb of ram but at the time didn't have the money.

System:
Intel i7 990x
250gb ssd + 1tb hhd
2x EVGA GeForce GTX 580 FTW Hydro Copper 2 (looking at a third if it would help)
Windows 7
Motherboard: (3-Way SLI Support) GigaByte GA-X58A-UD7 Intel X58 Chipset SLI/CrossFireX Ultra Durable™3 Triple-Channel DDR3/1600
Ram (What I have now): Triple channel 12gb(6x2GB), PC15000(1866MHz), 9-9-9-24, test 1866..

Now I am trying to figure out whether or not I should get the 24gb (the most I have seen so far for a triple channel system) but the set that I found looks as though all of it's speed and latency is slower... What I am confused about is whether or not these speeds are literal, or if having larger quantity memory negates that statistic... Here are the stats for the two sets that I am looking at....

Corsair Vengeance® — 24GB Triple Channel DDR3 Memory Kit (CMZ24GX3M6A1600C9)
24GB Kit (6 x 4GB), spd PC3-12800 (1600MHz), latency 9-9-9-24, tst spd 1600Mhz.

Corsair Dominator® GT with DHX Pro Connector and Airflow II Fan — 12GB Triple Channel DDR3 Memory Kit (CMT12GX3M3A2000C9)
12GB Kit (3 x 4GB), spd PC3-16000 (2000MHz), latency 9-10-9-27, test spd 2000Mhz.

So the Dominator has half the cards but the same over all capacity/density as the one that I already have at half the cost of the vengeance but it looks to me like it's faster... I guess my question is what will actually make my computer faster and smoother for gaming/regular use, what aspects of ram statistics should I actually be looking at? Also since I have six slots would it be possible to get two sets of dominator for an over all 24gb of uber fast (assuming the spd stats are what I'm looking for) ram even though it's marketed as a single kit with 12gb max?

Generally any ram above 8GB will be wasted in gaming. Going all the way to 24GB is just a waste of money in my opinion. I'd stick with what you have, and spend the money on the GPU.

You don't need more ram, save your money. Also, those SLI 580s should be fine for gaming, but you you are wanting to upgrade, a 770 or 780 would be better than adding another 580.
