What's going on with my CPU temps?

First of all, specs:
•Windows 8.1 64bit
•ASUS M5A78L-M/USB3 Motherboard
•AMD FX 6300 six core black edition processor at 3.5ghz
•4GB Corsair vengeance RAM
•Palit GeForce GTX650 2GB
•300GB HDD
•ACE silent 750w psu (sucky psu I know I will replace it at some point. Although I've been using it since Christmas with no hiccups. I took it out of my old system, along with the HDD and the DVD drive. Did I just jinx myself?)
•Standard DVD/RW drive
•Cooler master K280 case
•Arctic Alpine Pro 64 heatsink

I just built my first PC and I'm a bit confused with the CPU temperatures.

After I built the PC, the first thing I did was buy a replacement heatsink because the stock AMD heatsink had the diddliest little fan on it and was really damn loud. The replacement heatsink I bought was the Arctic Alpine Pro 64, (very cheap, very good). I didn't check any of the temperatures with the stock AMD processor because I didn't see the point, I had a new heatsink coming the next day so I just shut the PC off and left it. When the new heatsink came the next day, I discovered it had pre-applied MX-2 thermal compound (which was handy because I didn't have any). Installation was easy, got the old thermal paste off the processor with some of that 99.9% alcohol smelly stuff and installed the new one, screwing it on nice and tight. I checked the temperatures at idle using both HWMonitor and CoreTemp (I tried speedfan but the temps that it was showing was almost 20C higher than HWMonitor and CoreTemp at any time, whereas HWMonitor and CoreTemp stayed roughly the same) and they were all over the place, jumping from 19C to 40C back to 30C in the space of three seconds. Frankly I don't believe either of the two programs, there's no way the processor could be at 40C when idle so I ran some tests, both idle and in game. Below are the temps at idle (idle being with only HWMonitor and CoreTemp open, I went away for about 20 minutes):

Below are the temperatures in game (The game 'War Thunder' to be exact. It was just a test flight which is basically flying a plane about doing what you want, completely offline. I shot some stuff, caused explosions etc)

(I don't know why highest and lowest temperatures are the wrong way round in CoreTemp)

Now, as you can see, both programs are reading the maximum temperature as 63C, which is high for a AMD processor (at least from what I've read) but I'm pretty sure my PC has the function where it will just shut itself off when the processor hits 61C (the maximum temperature for the FX series of processors).

Are these temperatures correct? I know for a fact that my BIOS version is out of date, I tried updating it using ASUS EZFlash but I couldn't get it to work and I lacked the patience to figure it out. Could this be the cause? I've also read things about Windows 8.1 causing high temperatures and such. Could it be that?

I'm awfully sorry for the wall of text, I just felt as though if I included as many details as possible, it might be easier for you guys to give me an answer. This is also my second time posting here, the first being almost a year ago, so go easy on me ;)

EDIT: I only have one case fan, which is an intake fan, so I'm guessing the fact I have no exhaust fan could also be adding to it?

EDIT 2: Was just playing 'War Thunder' with a few friends and the Maximum CPU temp went up to 77C, lord help me. Should I try reseating the heatsink?

Hi. They don't look too bad all things considered. AMD tend to be hotter due to the higher TDP of those things. 63c is nothing to really worry about. If you start getting up to 95c - 100c, then you have problems.
