I would like to hook up 3 monitors to my graphics card and game. Can I do it?

I would like to buy 2 more monitors. Could i use my XFX Radeon HD 7850 2GB Core Edition and have good performance? Also, would another one make it work?

Yes, your XFX Radeon HD 7850 2GB can run three monitors. However, you will not be able to attain playable frame rates in most games @ 5760 x 1080 resolution and gameplay will be stuttery because of the lack of graphics processing power and an insufficient amount of VRAM.

Well the card supports eyefinity, but it comes in lower than my GTX670 and that has trouble with demanding games when using 2d surround @ 5760x1080. Kinda depends on the eyefinity resolution you have in mind though.

Well, it wouldn't be a crossfire setup, but that would give better performance than your current card. If your motherboard is compatible with crossfire, another 7850 would probably give better performance than the card you suggested (and be cheaper). Crossfire means that 2 (or more) graphics cards work in tandem. If there are 2 separate graphics cards, they will not work together. A graphics card needs to have the same other graphics cards to run in a crossfire (or sli) configuration. Look up sli/crossfire for more information.

I couldn't find a 7850, could I crossfire a 7870 with my 7850?

I did a little bit more research, and a 7870 would work (as well as the graphics card you suggested earlier), in a crossfire setup. that would give you some real power.
