Plex Server streaming 720-1080p over the internet to multiple people

So I currently have a plex server set up for a few friends and family. I am running it off my main PC however, because I do game often I would like to serve the media on a microserver that can support handle 3-5 people at any given time streaming video.

What specs should i shoot for?

I have read a lot of forum posts but none of what I am reading really gives me a warm and fuzzy. I just don't want my grandmother having to wait during a movie for it to buffer or encode.

The Plex recommendation for a stand alone server is a minimum of 2.4GHz/2GB RAM. What are the clients using to view the content? PC's? Roku Players? Mobile Devices? Those factors could change your hardware requirements drastically. That said, i have a 6 user setup and have tried several configurations. The setup that i wound up with was an AMD FX-8350 8 core 4GHz/16GB RAM/SSD primary OS(win 7 ultimate) drive. It can concurrently transcode 6 1080p streams and only use ~42%CPU, but 4 of the users are PC/MAC(direct stream compatible) and 2 are Samsung Smart TV's(direct video/transcode audio to downsample 5.1 to 2 channel)
