When you see my partlist, you might think the cost of watercooling is disproportionate to the cost of my actual computer and you would be right, but note that if I do end up building a loop, it's for the hobby aspect of it, and not necessarily because I feel it is a good investment :p

Anyways, I'm wondering how much money I can expect to spend if I want to build a loop going through my FX-6300 and HD7870? I'm not looking for extreme quad 120 radiators or something but just in terms of a decent entry level water cooling loop.

Don't get a kit. If you're doing it as a hobby kits suck and you will end up replacing half the components in the kit anyways.
Anyways, to answer your question, estimate around:
Pump 100ish
Rads 150ish
CPU block 75ish
GPU block 130ish
Fans 100ish
Res anywhere from 0 on up.
Fittings\tubing\misc: anywhere from 50ish on up

Anyways, if you invest in quality components, they will last you a long time, certainly longer than the computer does. And not everything needs to be purchased at once. With that said, I would figure a good place to start would be around 500 dollars.
