-SSD because it overall helps both your OS and your HDD speeds.
-Cheaper mobo, because in this price class you should just get a cheap one so you can afford better components.
-2x4GB Ram, this kit costs almost the same as what you found. And you really shouldn't go below 8GB in any build nowadays.

It's $20 more for better storage, and twice the amount of ram.

The 750K will likely give you 5% less FPS (maybe a bit more in AC) which you may overcome with a GPU/CPU OC.

I'd prefer the Gigabyte GA-F2A88XM-D3H FM2+ A88X but MSI makes good stuff with decent support.

Edit: If you feel the RAM is an issue, save up for another stick after you complete your build!

What would I install on the SSD/HDD? Windows on the SSD, games/media on the HDD?

SSD
Only OS and random programs (java, flashplayer stuff like that).

HDD
Games, media, pictures, pretty much anything.

if you sent a extra 20 you could get a 128GB ssd but i wouldn't really say you need anymore since loading times on a HDD with no OS on it are pretty ok.

Im using the same princip in my pc: 128GB SSD & 2TB HDD. even though my HDD is some extremely slow 5400rpm green HDD, it still manages to perform pretty well when i have the OS on a separate drive.

How much more performance would I be getting, in terms of gaming? Would there be a substantial increase in performance?

Would defently help alot in some games, Space Engineers, BeamNG, Battlefield 4/3 probably would help a couple of fps in every game. Also when you're not gaming, where the cpu is key, you'll get a better experience using your pc.
