I'm thinking of selling my 760 windforce and save some more and get a 780 poseidon. Can I run the 780 poseidon with my EVGA 500W 80+ bronze psu? or do I really need the 600w one? How much can I get for my 760 windforce? thinking of selling near the summer It'll be around 4 months used then and I bought it for $300+ here in canada.

It shouldn't bottleneck noticeably in modern games.
Once the really next-gen games start hitting that're fully optimized for the console's 8-core CPUs, then I suspect you'll see a CPU bottleneck. It's anyone's guess when 8-core reliance like that will take hold in more than a couple games. Could be two months from now, could be five years.

its very likely to run but you will cutting it very very close. running that power supply so close to its maximum over time will kill it. the 780 is a 250w reference design which equals out to 20.8amps. your power supply has a single 40amp 12v rail so it will work, but adding up the rest of your system will be pushing it. as soon as you try to overclock its likely you will trip the ocp(over current protection) on the power supply. the 780 can go well past its reference tdp will most models getting over 300w easily which equates to 25amps at the least, leaving not much headroom.
