There is no board named "ASUS M5A99X R2.0", only the EVO and PRO versions. Which one are we talking about?

I wouldn't personally go for either of those, but instead get the Asus M5A99FX R2.0 PRO, which is newer, better and doesn't cost any more than the ASUS M5A99X EVO R2.0. The one I suggested also uses the newer 990FX chipset instead of the older 990X, offering better Crossfire and SLI capability.

As its a prebuilt system I think I will get a higher quality GPU without a crossfire compatible motherboard which will then allow me to replace the GPU in the future when it can no longer achieve my requirements.

Thanks for the help! If I were building my own system the PRO is much better than the EVO as it allows for Crossfire with x16 and x16 whereas the EVO is x8 and x8.
