Samsung 840 EVO x Kingston HyperX 3K for RAID 0?

I have the Hyper X 3k. If I were buying today, I'd get the 840 EVO.

But why do you want to RAID them? For normal tasks, a 256GB drive is just as fast for the same space.

Most 120 GB SSDs ae slower compared to 250 GB models. I would recommend just buying 250 or 500 GB 840 Evo and just connect without RAID.
RAID usally makes it harder to update your SSD, sometimes also TRIM don't work.

Also Samsung doesn't support RAID, so if your raid dropped or failed, they wouldn't be able to help you rebuild it.
