if i where to have two gtx 780s would that make 6gb vram?

For Graphics cards, the RAM is not accumulative. Both Video cards need to have the same information mirrored in their VRAM.
So having two 3GB cards, will still effectively leave you with only 3GB of usable VRAM.

It's the same reason why a video card with 1GB can not SLI with the same card with 2GB of VRAM.
