(1) pcpartpicker says 358W - is the 550W PSU good or should I go a little higher?
(2) what other items do I need to build this (such as cables, thermal compound, etc)?

That PSU is a perfect fit for your build , nice choice and high quality.

You board should come with some sata cables.

Power supply has all the power cables needed.

I don't use the stock thermal paste , I use this.
