I just did my first build and it is a MSI g46 mobo,fx 8320 CPU, 8 GB of ram, MSI HD 7770 with a 500 watt psu. Looking online I keep seeing all of these videos showing people playing these games on ultra or maxed out settings and the majority of them seem a little choppy. So my question is if I upgrade from HD 7770 to a r7 260x or r9 270 is it going to be much better or a slight change to better?
Is upgrading from hd7770 to a r7 260x worth it?

R9 270→ Much better change
R7 260x → Little change in most cases
For example in BF3 260x and 7770 give almost similar performance(with 260x being little faster) but in Bioshock Infinite 260x gives almost double average fps than 7770
260x will also be better than 7770 in BF4 due to Mantle support
270 is simply faster and better than 260x and therefore more worthy to upgrade from 7770.
260x is more like a newer version of alternative to 7770

the 270 is around double the performance of the HD7770 http://www.techpowerup.com/reviews/ASUS/R9_270_Direct_Cu_II_OC/26.html and would be a good upgrade.
