But at the moment there is a limit of 8GB per DIMM slot. Quad channel can offer 8 slots - 64GB. Dual Channel 4 slots, Single channel 2 slots.
So it is size not speed that is determined by no. ram channels. And size does matter!

The number of dimms and a compatible chipset determines ram channels. Size and speed is irrelevant to number of channels and 8gb is the max for non-ecc, ecc goes up to 64gb.

You will Yes, DRAM itself is a 64 bit device, when you run DRAM in Dual channel it is used as a single 128bit device and can be up to 10-15% performance wise, tri channel operates as a 196 bit device and can pick up another 5-9 percent performance wise, true quad channel as on the X79 mobos runs the DRAM as a 256 bit device and performance increases even a little bit higher than tri-channel.

I have been debating this myself for my next rig. weighing whether its worth it to get an X79 board for the quad channel. Considering X79 board and corresponding chip would add another $150 to my budget, I am not sure it would be very value happy. If it would give literally double the speed I might consider it but not for a 25%ish bonus.

In Synthetic benchmarks Quad Channel has been shown to be 2x as fast as Dual Channel when the Clock Speed is the same.
With current games, the performance hasn't really shown any boost but, that could be due to several other factors.
The developers of 4A Games was asked about the memory bandwidth difference between the Xbox One and the PS4 and he noted that the memory bandwidth was very rarely if ever the bottleneck with their game development (This is just added for reference).
The Chipset is what determines the type of RAM supported but it can be limited by the number of slots (Some Chipsets can be put on mATX boards and only have two slots but the chipset itself could handle quad channel ram).
Anyway, the only place that anyone has shown a huge difference between dual channel and quad channel ram (As well as faster RAM) is when an APU is being used as the primary GPU in the system and then frame rates would literally go from about 30 to 50 FPS in games like BF4.
Oh and even more, DDR4 isn't showing any boost over DDR3 when Clock Speed is the same.
