4000 gaming rig not putting the performance i expected out

Sooo, this is my first from scratch build, i invested around 4000 into everything from the pc,monitors,desk,chair,gaming mouse and keyboard, really went crazy, but im finding im not getting the fps that i should be with this set up. well heres my set up and then ill go on a little more about my issue, thanks.

Asus Sabertooth Z87
i7 4770k @ 3.4mghz (running at 4ghz in cpu-z)
2-evga gtx 780's running in sli
4-8gb corsair vengeance(32gb total)
evga supernova 1000p2 power suply (1000w)
Corsair h100i cpu cooler (and a shit load of fans in my case lol)
Windows 8.1
Running on 3 asus vn247 monitors
2 dvi cables and 1 hdmi

Elder scrolls online gives me a average of 40
Batman Arkam origins gives me a average of around 100
i did some searching and seen that people with alot older set ups doing much better in the fps,

Any tips or help would greatly be appreciated thanks

Do you have the latest drivers from the Nvidia GeForce Experience?

yes but what ive read for 2 gtx 780's 3 monitors shouldnt give me any issues

what is the frarmebuffer of your gpu? 4gb? or 2gb?

ill just share my suggestion here. Basically install msi afterburner (or something similar), together with HWiNFO64, display the temps, gpuRam usage, cpu/gpu utilization, FPS, temps among others
compare them when using 1 and 3 monitors. At least how big a factor is are the monitor, and also if 3gb is enough
