I have 1 GTX560TI Hawk, and I am thinking of getting another instead of spending $$$$ to upgrade mobo, CPU, and video card. My mobo will do x8/x8, i7 CPU, 16GB 1600 RAM, and I have a SSD. I play WoW with just about everything maxed out, but I can't sustain 60FPS.

What can I expect to gain if I get another GTX560Ti Hawk, and SLI them at x8?

Yes there will be a good gain and most SLI setups run at X8 X8!

I figured it would be better, but would it be 50% better? I am assuming that x16/x16 would be a 100% increase, x16/x8 75%, x8/x8 50%.

SLI is never a 100% increase, usually around a 50% increase, which is what you should see.

Nothing gets 100% here you can see it with GTX 680 running at X8 http://www.techpowerup.com/reviews/Intel/Ivy_Bridge_PCI...
All tests I have seen have shown insignificant difference between SLI ay X8 X8 and X16 X16 or in the range around 1% max!
Your card would not even max out X8 ver 2.0 interface so it will be the same as at X16.

It doesn't work like that.
