This is horrible
I have try for a year now and there is only one solution I have found that works is using my video card as a sound card for my pc.... Make no sense. I hate having to turn my Monitors on and off to make my amp sync up with my sound signals there has to be a better way.
S/PDIF is a far better way of transferring music and video signals why can't I get 5.1 sound.

Running
Asus p8 z77v pro 1155 (motherboard)
780 gtx ti (Graphic card)
5.1 set up model rx- v371 yamaha ( amp )
Connected with a hdmi or with S/PDIF
Running a i7 2600k cpu don't care if I put more load on it

Solution
You need to go into the advanced settings of your bios to see the setting i mentioned. I actually downloaded your mobos manual and saw the setting there. This option is labeled SPDIF OUT TYPE and it should be set to SPDIF. I deleted the manual after posting my first answer so I can't give you any more specifics at the moment.
But once this is set in bios and selected as the default audio device in windows, you will need to connect the amp to your PC with an optic fibre (toss link) cable.

Have you set the "SPDIF OUT Type" setting in your BIOS to SPDIF?
You should have also enable and set to default audio device in sound settings.
You also need to use a toss link (optical) cable to the amp.

Totally check what you said and it all done right and you are correct the set up is what I should of checked first. So why is it when I do the sound test on the windows speaker Icon I get 2.1 but when I play music I am getting 5.1 and there no properties to change this setting like you would normally get with 3.5 mm jacked.. which is confusing me. I have it set up on dts interactive 5.1 surround sound is that the same thing as 5.1 in properties I just gotta figure out at way to add pictures ill show you. Worst part is I am on windows 8 now haha

What weird is that I just did some testing and the 5.1 sound come out when I use it, But it doesn't show up during the stupid sound test with the volume checker weird. But when I do an in depth check of the sound some parts use the 5.1
