Can you switch hardrives?

Yes, however:

1. You would need to reinstall Windows which likely means buying a new copy as well since most copies are non-transferable to new machines.

2. If the drive is too old, or too small it may be better to buy a new one. A WD 1TB (1000GB), 3.5" is about $58 through pcpartpicker for refernce.

If you mean use your old one for loading everything from scratch, yes.
If you mean using your old drive from a pre-built OEM (HP, Dell, etc) system - NO.
If your trying to reuse a Retail version of windows, more than likely, you'll still need to do a clean install,.

What hardware are you installing it on & if you are re-using windows, what version?
