You dont need to, but I would recommend it.
I would recommend a second/third exhaust at the top as the case has 2 intake and one exhaust.

Are 2 Corsair AF 140mm quiet edition and 1 Corsair AF 120mm quiet edition good for the purposes you recommended.

They would be good, but you dont have to replace the stock fans.
Corsair ships with non branded models of their SP and AF fans in the case. The intakes should be AF, non quiet however.

In the case specs it says I can add these fans not replace them, and aren't the quiet edition AF?

You can add those, but it has 3 fans included Fans Included Front: (x2) 140mm
Rear: (x1) 140mm

As for the fans they are AF, just not branded.

hi zoog18 ,
for maximum airflow i would recommend bitfenix spectre pro fans , they push way more cfm than the corsair fans also with a choice of led
