Need help installing win 8.1, Backing up and Deleting a triple boot system | Need a fresh start

So I have got this triple boot system containing windows 8,7 and XP, Don't ask me why
They are all installed in Drive C D and E don't know which drive contains what
I want to backup my entire system containing the 3 OS so that I don't delete something that I need and can restore them back if needed

After backing up I want to delete all OS and install only a brand new windows 8.1 OS

Thats it
I am confused I think I need to create a image of all three OS and copy all files of the drives (C D and E) (including the os images) into another hard drive
Then Format those drives

And then install windows 8.1

I have never done this so I thought I will ask for your opinions

Seagate Barracuda 7200.12 ST3500418AS 500GB 7200 RPM 16MB Cache SATA 3.0Gb/s 3.5"
Almost full

G: H: I: J:
WD Caviar Green 2 TB HDD Internal Hard Drive (WD20EARX)
Half Full
