Planning on my first build in the near future, and my knowledge base isn't what it probably should be yet.

I'm currently running an older dual core E7500 @ 2.93, and been thinking about upgrading to the 8 core AMD FX-8350. I'm not sure what kind of motherboard i have (which is a stock part) but i assume i'll need a new motherboard to make the brand switch.

My question is, if i end up swapping the motherboard, what else will i need to swap? Is my nvidia 660TI useless and i need to buy an AMD GPU? What about my power supply? Are connections mostly universal?

Solution
Yes, you will need a new AM3+ motherboard and you'll have to re-install Widows. The PSU might not be enough if it's really, really low wattage. Seeing as you have a GTX 660Ti your PSU can't be that terrible, right?

Yes, you will need an AMD-based motherboard for an AMD processor. Specifically, the AM3+ socket for the FX-xxxx CPUs. Gfx cards can be of either brand if you are going with just a single card. They are interchangeable.
For your specs, look for a high quality 600W or better PSU. Corsair, XFX, Seasonic, Antec, etc.
Connections are all universal.

Actually, i'm currently running an 800W corsair PSU, and was thinking about going with the Sabertooth 990FX motherboard. Assuming the only changes i make are the new motherboard, CPU and probably a new fan since i hear the AMD's run hot, will i be good to go?

As mentioned above, you will have to reinstall Win7 when you change MBs. And then you run into the issue of getting it activated if the original copy was an OEM.

You can try to boot with the old installation and new MB. If they contained similar components, it may boot and load default drivers, etc. Then you'd have to do a registry clean and install the correct drivers for your MB. But Win7 would still recognize that you had a "different computer" with an OEM license.

What kind of problems could i run into if that happens ( depending on if it's OEM)? I'm watching those videos you posted now, so maybe they address it. Is there any way to check if it is OEM?

Do you have a Windows install disc? It is either OEM or Retail and it should be mentioned on the cover or on the disc. If you didn't build the PC yourself it's OEM.

OEM license is tied to your motherboard and in order to change that you have to call Microsoft.

Even if one builds their own PC, most of us still opt for the less expensive OEM license. So yours may be OEM.
Right-click My Computer and select Properties. Scroll down and look for Product ID . If the string contains the letters OEM, it is an OEM license.
