I was wondering how I could solve this problem where I start a game with around 300fps then after a while it drops down to around 100 and becomes very unstable with constant changes.

First make sure your card is running at full PCIe speeds; run GPUz in Crossfire/SLI test mode and watch the PCIe speeds. If it doesn't cap at what it should (ie what the slot it's in maxes at) then try re-inserting the card into the same slot (make sure to discharge the system first). I had similar problems when my rig jumped from 16x to 8x for weeks and I couldn't figure it out because my main slot wasn't supposed to change even when there was a second card inserted.

with a TDP of 77w I'm supprised you're getting those temperatures, are you using a stock, aftermarket fan or liquid open or closed loop?

Check your fans and make sure they are working, if they are 3 pin try re-inserting them while idling in the BIOS to recalibrate the RPM monitor if it looks off.

Not necessarily, I have an FX-9370 that idles at 40C with a clock of 5GHz (right now I have it at 4.44GHz normal and 5GHz turbo, but it idles pretty hot for a middle-class CPU), and an older Pentium 4 LGA 775 2.93GHz that idles around that too. i7s can get mildly hot if you don't have a heavy cooling system. If you really believe it's throttling then I would suggest starting with a Corsair H-80 ONLY IF it's an upgrade compared to your setup.

(edit) worded that horribly, If you can narrow it down to CPU throttling then you can either invest in a cooling system or lower your effective clock speed for more consistent temperatures; but the former will always be better.
