Great build, but as the poster said he will not be including the 3 monitors in the $3000 dollar budget.

So, I've edited your build a little bit. I've kept all the essential parts, sold all the monitors and get a secondary 780.
The SLI 780's will be enough to power your 3 monitors with ease. I've also added a bigger SSD.
