I lag with High FPS???

I get around 100- nearly 500 in minecraft. I was wondering though, why do I lagg when my fps is over 100. I know something is wrong because if I record it, I get about 60, and when I replay the video, its so much smoother than what im watching. I do notice temps are a bit high

Temps
system is 40-42c steady
cpu idle - 24-40c jumpy
cpu non idle - 40-70c jumpy
gpu idle 20c-32c

I am running a stock cooler btw.

Asus GTX 750 ti
Fx 8150 8 core @ 3.6ghz
16 gigs of ram 4x4 (2 different series)
Cool master haf 912
cx 600m watt
windows 7 ultimate.
GA FXA 990 ud3

My friend is a really good tech guy but he doesnt know the solution either.

BTW my fan runs loud.
also, before i reapplied new thermal paste, it was overheating so bad itd shut off.
Issue was because there was to much thermal paste. Reapplied, but its lower, and eventually heats up if I do alot of things like updating, testing minecraft, and on google chrome.
 
You want to use V-sync and lock it to 60fps. This will give perfectly smooth frame rates with no jumping or lag.

If your CPU is hitting 70c, you have issues. That is too high for that CPU. The max allowed temp for that CPU is 61c. You need to keep it below that. The CPU is probably throttling and causing lag.
