I want to record and game at 1080p ultra, paired with an FX 8350 how well could I record my gaming?

I'd go for the 280X, the 3GB of VRAM will come in handy. And the performance is similar between the 2 and varies depending on the game

well, they are about equal in performance, so i would get the 280X as its cheaper, and see if you can get an i5 4670k, it will outperform the 8350 significantly.
