2 x 4GB is definitely the way to go. Don't get stuck in a bad position in the future when you need to upgrade RAM, then the memory is out of stock, higher price, difficult to locate, etc. etc.

Future proof it now and don't worry about it again.

With a single stick the system runs as single channel rather than dual channel. The memory architecture is not fully taken advantage of when using only one module.

Make sure your kit has the right number of channels. In your case you'll very likely want a dual channel kit for the highest probability of everything working. Even if you want to populate 4 ram slots, you'll need to do so with 2 dual channel kits instead of one quad channel kit.
 
1) There is no useful QVL at the motherboard website unlike other motherboards. There's a limited number listed and it says:

"This is not a full listing but a memory guide used for testing."

2) G. Skill is generally a safe bet.

3) Your manual states that:
a) you support up to 32GB (16GB max per slot)
b) a SINGLE stick can go in either slot
c) Both sticks are required for Dual Channel

4) Frequency/Single-Dual:

*Some of the APU's are bottlenecked if using less than 2133MHz memory in Dual-Channel because they use the System RAM as Video RAM (shared). If you use a CPU or use an APU but don't use the GPU portion (add a dedicated graphics card and use only that card for graphics) it doesn't matter nearly as much.

You'll also use some of the System RAM (if using APU only) so if you dedicate 1GB of it for Video you have 3GB left (if using 4GB).

There are many scenarios where a SINGLE stick (i.e. 1x4GB) won't bottleneck anything but I recommend TWO just to be safe.

5) AMOUNT:
a) For non-gaming, basic usage 4GB is sufficient. 2x2GB.

b) For gaming or more demanding tasks: 2x4GB 1600MHz recommended.

I will be using an Nvidia GT 640 2GB GPU as well as an AMD A6 5400K 3.6 Ghz CPU, so I believe there shouldn't be any bottlenecking going on while gaming with a single stick.

The only bottlenecking I see is this mobo won't be able to utilize this GPU's PCIe 3.0. It only supports 2.0.

Correct me if I'm wrong.
