Will 2 of these:
G.SKILL 2 GB DDR2-800, F2-6400CL5S-2GBNT
successfully work with 2 of these:
takeMS 1 GB DDR2 800 CL5, TMS1GB264C082-805aq
on motherboard
AX78 from abit
with a CPU
AMD Athlon 64 X2 3800+

And if yes, will they be able to utilize dual channel?

Shouldn't be an issue, I mix and match RAM on PC's at work all the time.

It should work. You got good bases for it with same speed and timing.
Ofc it's best to have exactly same memories (manufacturer, type, size, ...) to achieve max compatibility but it should work.
I mixed few times different sizes from different manufacturers and different age (like 4-5y difference) without problem and even different speed. But ultimately noone can be 100% sure until you try it.

DDR2 tends to mix and play better together than does DDR3, if there are problems though give me a shout, can often be cleared up with minor voltgae and/or timing adjustments ;)
