Hey. I'm deciding to have a music production (24bit 96k)/latest gaming/video editing PC as my old bag of **** is facing retirement.
I just need to know if the AMD FX 6350 CPU is good enough (no bottlenecks) for utilising the full potential of a GeForce 780ti GPU?

Zero bottlenecks? No.
You might have to upgrade to 8350/i5 4670k before you will have 0 bottlenecks.

In cpu dependant games your chip will hold back a GTX780ti. Overclocking should help if you have the proper cooling, and power supply to do so. Here is an article showing only cpu dependant games: http://www.xbitlabs.com/articles/cpu/display/amd-fx-8350_6.html#sect0 Games that are not CPU dependant will depend on the graphics card so the CPU won't matter much.

I have been advised by those I trust to go with the AMD FX 6350 instead of any Intel chip (not 100% sure I fully understand the reason why, I'll trust their judgement for now) for saving money, a little future-proofing and of course music/video production purposes.

The PC in question was originally just a music/video production idea. However, I couldn't resist the GTX 780ti for flight sims and playing Total War games on a sensible machine for a change.

The motherboard is an Asus Sabertooth 990FX, for good measure and the RAM installed is the Corsair Vengeance LP 16GB 1866 MHz (2x8GB) - DDR3

Please tell me that my configuration was a good choice

Maybe if you were constrained for money it was a good choice, but for most of the games out there an intel i5/i7 will fare better overall in games.
