It depends, if you get a good 500w psu it will be enough, but I would go 550-600w to be safe

A good 500W CPU is sufficient. While 80+ is no guarantee of quality (e.g. some Coolermaster, Raidmax, both of which tend to fail competent technical reviews), an 80+ unit will have been tested up to its full labeled wattage (although at an artificially low 23C) and is therefor not likely to be system-killing junk.
The best PSUs are made by Seasonic (their own, XFX, some Antec, others), Superflower (Rosewill Capstone, NEW Kingwin), Flextronics (high-end Corsair), and Delta (some Antec).

Oh, I think the 80+ is a good "rough" measure as well. Most non-80+ PSUs are obsolete, inefficient, and overrated designs. The one exception I know of is the Antec VP-450 (I believe they have other wattages in the VP line as well), which are efficient and pass competent technical reviews with flying colors. They are disqualified for 80+ only because they lack active PFC (they have a little voltage switch). Enermax also has a new budget line of NAXN units that lack active PFC, but are efficient. They were built by CWT though, not Enermax, so I do not trust that they will not have cut corners on quality. CWT makes the Corsair CX, with the Samxon capacitors that can't take heat. I think they've put those in some others too.
