How to set up an extended display with 2 monitors and a laptop?

Well it seems you will have to connect one display through VGA and the other through HDMI.
Are you running Windows 7? If you are, just right-click your desktop and select screen resolution. Something like this should come up, just with 3 displays: http://www.murgee.com/monitor-information/images/extend-display-windows-7.jpg
You can drag and drop the displays to match your physical configuration (click identify to make all the displays show the number they've been given).
Make sure the 'multiple displays' option has 'extend these displays' selected (like in the picture).

On this laptop I am running Windows 8.1. Is there a way that I can avoid using VGA cables and connect both monitors to the laptop through HDMI cables. There is only one HDMI port on the laptop - is there a type of HDMI splitter that I can use?

You'd need something like this if you want them both to run through HDMI: http://www.amazon.com/Plugable-Multiple-2048x1152-1920x1200-DisplayLink/dp/B007L6NYAO
For Windows 8.1, go to control panel > appearance and personalization > display. This should come up: http://winsupersite.com/site-files/winsupersite.com/files/uploads/2013/06/w81-scaling-series9-01.jpg
On the left, click adjust resolution and you should find screen resolution settings similar to Windows 7. From there on you can do everything just the way I told you to in my post about how to do it on Windows 7.
