I want access from my phone to see (and open?) documents and pictures in folders on my server. Possible?

No, there's no app or software on the BB to configure the phone as part of a networking setup like there is on a Windows computer or tablet. It can be configured to connect to a wireless router for internet access but that's all.
There may be an app in the BB World Store to do it, but I don't know of one.

That's not true at all.
Install Blackberry Link on any PC and you will be able to access shared folders from anywhere, LAN or over the internet as long as Link is running in the system tray.
You'll have access to the shared folders via File Manager software on the Blackberry
