What is a server pc and why would anyone build one?

Right now I am trying to find a cpu for my rig with a gtx 770, 8gbs 1600 ram, asus z87 mobo. I will be gaming A LOT on this build and I was wondering what a server cpu would do. I have seen that the xeon e31230 and 1240 cpus are hyper threaded and give similar performance to the i5. So it would be like buying an i7 4770 without the price right? What other benefits could I get out of one of these cpus if i go with one of em?

A server CPU is designed for server tasks and is not practical at all for a normal PC, you shouldn't get one.
