Single 780 or 770 sli

No need to be confused. There is no such rule that go for SLI/CF only when using multiple displays. You are better off in either way. Games you've mentioned support SLI so there is no scaling issue there. You already have a very good monitor.

Single GPU is mostly recommended because there are issues with the scaling in addition with not all games support SLI.

If you've budget go for SLI of two 770 and you'll be benefited.

SLI of two 770 will give you more performance than single 780. 850W PSU is sufficient for SLI as this SLI will require like 460 to 480W of PSU. However, not all games support SLI. So make sure before buying that games you play support SLI, otherwise it would be single 770 vs single 780 and you can do the maths which one is better.
