H hope to build my first pc soon http://pcpartpicker.com/user/mckinstryt/saved/4B1a
For the sake of airflow and cable management could i use an Optical drive in 1 optical drive slot and put my hdd and ssd in the other slots with some type of convertors?

I wouldn't, HDD's need cooling too, and with no airflow (which in a 5.25 bay they wouldn't get) then they'd get toasty. Unless you use a 5.25 to 3.5 bay converter that uses 3x5.25 bays and creates 4x3.5 bays out of them, and typically this includes a fan.

You should have your HDD and SDD's in good conditions, though they don't need as much cooling as lets say, a CPU, they still need to be regulated to assure that they do not fail. Keeping them in a bad position with converters and bad temperatures can severely reduce the life-span and possibly reduce the performance of your HDD/SSD.

Also, the chance of them failing is more. Most people don't need the optical drive anyway now and days, but it's nice to have.
