Will the processor bottleneck my graphics card? Any better graphics cards for overclocking?

I think the 780ti you've chosen is good. If you plan to water cool, it's probably best to grab...
AMD is your choice though with your budget, I personally would go Intel. It will bottleneck the 780ti in some games compared to i7 4770k
If you have patience, I would suggest waiting for either Devil's Canyon (better OC i7 4770k)or Haswell-E (Better OC i7 4770k with quad channel or 6 cores+Ht)

Motherboard is a bit pricey unless you need all the extra features

You should throw in a SSD, best things ever

You can do a custom loop if you want, all up to you

For cooling, I would suggest something a bit beefier than a H60 if you're going to push a highish OC
 
For gaming, 8GB ram is fine.
Get a better quality power supply. 550-650W is enough. Good brands: Antec, Coolermaster V Series, Corsair(not VS, CX,CS series), Seasonic, XFX
Don't get a H60, an air cooler would beat that and will be quieter. Cooler Master Hyper 212 EVO is a good air cooler.

The H60 is a place holder for a custom loop. I'll remove it now. I need the RAM for animations and 3d rendering.
 


I agree with the cooler bit. While the H60 does outperform the 212 EVO, it is by a small margin only. Best would be either use the EVO or get something in a entirely different class (NH-D15, H100i etc)
