Corsair vs Kingston RAM

Which should I choose?

Corsair Vengeance Pro (2x4GB) @1600MHz in Gold colour (which matches my builds colour theme)

or

Kingston HyperX Beast (2x4GB) @ 2400MHz in black

I have been told that with the Kingstons they will be dropped down to 1.5v from 1.6 and the speed will also drop down accordingly.
I have also been told that there really isn't that much difference between RAM speeds in game.

For strictly gaming 1600/9 is basically entry level and 1866/9 is the sweet spot, faster DRAM will be most apparent in scenarios of multi-tasking, imaging, video work, VMs, etc where you are actually using the DRAM, gaming it's simply a conduit for data
I think you've answered your own question. Any difference in real world performance would not be noticeable to you. In general, get the fastest RAM you can afford (for possible overclocking in the future) If that is not a concern, then go for appearances, or if price is a concern then get the least expensive of the two.
