GA-X58A-UD3R won't recognise any more than 6 drives at a time

When I connect up more than 6 HDDs or ODD my system drops any extras at random. I am currently trying to run 6 HDDs and 2 ODDs. I have been told that the problem may be in the power supply. It is a Zalman ZM750HP. I can't see why because it should supply sufficient power to the 12v rails to power everything.

The PSU also powers a GeForce GTX 460 dual screen GPU

Maybe your motherboard doesn't support that much HDDs ?
Try to remove one

THe board gave up the ghost so I replaced it with a Gigabyte X79-UP4. It goes into an endless restart loop and won't take me to the splash screen. I have put a MB microphone on but it doesn't get tyo the point of providing me with a beep code.

I've rotated memory in and out, put a jumper on the case intrusion connectors. I've tried with all HDs disconnected. I've tried a differnt GPU. I've tried a different PSU.

I have run out of ideas.

Do you have any more?

What cpu do you have ? Did you make sure it's compatible with the x79 socket ? It's only for LGA2011 intel cpu's , like the 4820k or 4930k
I think you messed up your cpu
EDIT : That powersupply is a bit outdated too , get a new one like the EVGA SUPERNOVA G2 750w 80+gold , fully modular psu and hope the cpu's pins aren't f**cked up due to the new mobo
PS : Make sure you clean off the thermal paste and reapply some new one on the cpu and put it in the X58 ( NOT THE X79 ) motherboard once again , the one with the LGA1366 socket and hope the cpu is fine , otherwise you'll have to spend another 320-500$ for a new cpu or get another mobo with a cheaper cpu
