Which would be better, One HDD or Multiple Smaller Ones

I am indecisive between getting a 1 TB HDD, Two 500 GB, Three 320 GB, or Four 250 GB.
On practical terms, the smaller drives will have less cache like instead of 64 MB of cache, it has 32 or 16. Does cache affect performance and reliability of HDDs?
Also, is there much difference between 8 MB cache and 64 MB cache in HDDs?
Would a single 500 GB run as fast as a 1 TB?
All the HDDs will be running at 7200 RPM.
Assume price is not an issue.

It is always a good rule of thumb to have more than one drive for the purpose of backing up important files and data
if one drive fails you lose everything , if you have more than one drive and a backup and one fails you do not lose your important data

Higher cache can increase performance in some situations, does not effect reliability. Check reviews for individual drives to see differences. If you are not going to use raid I'd recommend going for a single 1TB drive.
 
While having multiple drives in a system does make it easy to have multiple copies of data on separate drives, it is not a real backup. You'd be better off getting a 12GB ssd for the OS, a 1TB drive for data, and an external drive for backups that you can keep off-site most of the time. I keep an external drive at my office that holds my home backup. I take it home 1 week-end a month to refresh the backup.
