Can anyone with multiple monitors and multiple graphics cards help me?
Please help, thanks! (I need this for uni)

I want you to do a simple test:
Plug all monitors in one gpu and enable SLI, what is your fps on eyeinfinity/surround?
Then, plug one monitor into each gpu, disable SLI, and enable eyeinfinity/surround, did the fps go up or down? And by how much?

You're generally supposed to plug them all in to the same GPU. While they might work when plugged in to different GPUs each, I doubt they would work better. Oh SLI disabled when separate? Well then I think it's better in SLI, (I haven't done any testing though.)

I could be wrong, but I am pretty sure that you can't sync a multi-display image across multiple GPUs without using SLI or Xfire. Using the cards separately, I am pretty sure, will give you independent displays that can't render a unified image as if you were using a single card or multiple cards in SLI or Xfire.
