Hey guys I'm gonna start researching parts for building a PC and was wondering what size ram I should get for a gaming PC, and what setup eg. 2x4, 2x8, 2x16, etc.

Watch Dogs is being released shortly with requirements of 6GB memory minimum, 8GB recommended.
If you are building a low to mid range PC, 8GB is enough
If you are building a high range PC or want to support games release in a couple years time without buying more memory, choose 16GB.

Modern CPUs have at least two memory channels.
You should make use of these or you reduce the memory bandwidth available.
Choose a 2 x 4GB kit for 8GB memory or a 2 x 8GB kit for 16GB memory.

If going 8GB in most all instances best is 2x4GB, an exception would be if you go socket 2011 which runs quad channel, in that case I'd srep up to 4x4GB, to utilize quad channel (plus if going 2011, will prob want/need more DRAM anyway)... Also if in budget, not a bad idea to consider 2x8GB (prices continue to rise, if it will fit in budget, get it now) and would look at 1866/9 as the minimum, 1600/9 or so will be fine for simply gaming, but may want again to look to down the road a bit ;)

4 GB memory is not enough for Skyrim with high-res textures or for Watch Dogs.
Broadwell desktop processors will use DDR3.
You won't see DDR4 support in desktop processors for at least a year.

DDR4, sure if you want X99 and a whole new rig once again, the 1150 and Z97 are planned to be the launch point fro Broadwell when it arrives.
