RAM - http://www.corsair.com/en/vengeance-low-profile-8gb-dual-channel-ddr3-memory-kit-cml8gx3m2a1600c9
Motherboard - http://www.msi.com/product/mb/Z97_GAMING_5.html#overview
Will the Corsair low profile RAM above work with the MSI Gaming 5? Can this board use 1 memory module rather than 2? Can I buy 2 of the same (not 2 ram in a kit) RAM but separately and use them in the system? If not please recommend a reliable ram. Preferable 8gbs (2x4gbs) low profile dual channel memory because I am going to have an Evo 212 mounted.

Yes, that RAM will work with that board. Yes you can use just one memory module, but you lose out on dual channel mode, so I don't recommend it. While you can potentially buy two identical sticks at separate times, and use them together, you run the risk of compatibility issues as they're not a matched set (I'm not saying you will have compatibility issues, just that you run the risk of it - many people have no trouble doing that).

If you're wanting a 2x4GB set of low profile RAM, then the Corsair set you linked would be fine, or if you want an alternative, G.Skill Ares RAM is good: http://www.newegg.com/Product/Product.aspx?Item=N82E16820231546

Neither of the linked rams for this say they are intel 4th gen/haswell compatible- will they work anyway? For my particular build with this mb I am looking at overclocking a new pentium G3258, which will eventually be upgraded at some point to something like an i7 4790k. I guess my real issue is "does the processor matter to ram?" I mean I am getting a Z97 chipset purely for the purpose of having a 4th gen intel in it. If no ram is compatible with the haswells how are you supposed to run these cpus?

PS- kinda new to the whole building your own pc thing so feel free to correct anything i get wrong- better to mess up here than with expensive components.

Sorry for the delay in replying. Yes, both those RAM sets are compatible with 4th gen Intel CPUs/chipsets; sometimes companies can be a bit slow to update all of their literature when new hardware comes out. For example, the G.Skill RAM doesn't list 4th gen on the Newegg page, but the manufacturers website specifically states compatibility with a huge list of Z97 boards (including the one you picked), which shows they certainly do work with 4th gen Intel CPUs/chipsets).

The G3258 technically only officially supports DDR3-1333, but all the reviews of the chip I've seen have shown it has absolutely no trouble with 1600 MHz speed RAM (a quick selection of the XMP profile for the memory is all it takes), so you shouldn't have any issue.
