Multi Monitor or Ultrawide Monitor?

I would go with the ultrawide monitor. 2 monitors is generally for a work computer (so you can do multiple tasks at a time). Also, having multiple monitors can take a massive hit on game performance (GPU has to draw things for both monitors at the same time). Your best bet is to go for the wider one in my opinion.
