New dual screen setup

I am building a new computer, (4770k, GTX780), with which I will most likely end up running Mac OSX, and i am looking to replace my current triple 24" 1080p setup, with two larger screens. Currently I am looking at 2 options:
1) 28" Samsung U28S590D 3840x2160 ($600CAN)
2) 32" Benq BL3200PT 2560x1440 ($700-$800CAN)

*Very important note that many people fail to understand: I AM NOT A GAMER
I will mainly be doing 3D and photo work, with some hobby level video/music editing. Gaming performance is negligible, I dont play games very often, the hard drive that I keep my games on isnt plugged in because it is loud. I was also thinking about one 32" display and 2 1080p's on the side in portrait. Or a single 2560x1600 with two 1600x900 on each side, but I think those would be abit counter-intuitive to what im trying to accomplish.

I am currently leaning towards the Benqs, simply because 4K is still in its infancy. It still runs into issues with things like GUI scaling and text size. And most programs can take advantage of the huge amount of extra pixels. I would be a bit less apprehensive about getting the Samsungs if they were a bit bigger, but since they are only 28".... Lastly, I would have to power them. Two WQHD screens can be run off a single GPU at max refresh rate, through a DVI-D and a Displayport. But two UHD screens are a bit more challenging, as they need 2 HDMI or a DP to work properly, I am planning to use only one 780. If I did this, I might have to use a Firepro or Quadro to get them to work the way I want them to.

*note: I know about Korean panels, but I need the colour accuracy and reliability, which I dont really trust will come from less than A-grade panels.

That's my thinking as well, but larger size, or more pixels? That is the question.
